Ingredients Required:-
- 2 tablespoons of any refined oil
- 1 onion finely chopped
- 2 tomatoes chopped
- 2 cloves garlic minced
- 1-inch grated ginger or juliennes
- 1 green chilli finely chopped
- 1 cup of diced carrots, peas, potatoes, cauliflower
- 2 teaspoon Suhana Kitchen King Masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- Salt to taste
- 1 teaspoon sugar
- 1 cup water
- Fresh chopped coriander for garnish
- Heat oil in a kadhai over medium heat. Add chopped onions and sauté until they become translucent. You can also fry these until golden brown and add to the gravy in the end.
- Add minced garlic, grated ginger, and chopped green chilli. Sauté till the raw smell vanishes.
- Add chopped tomatoes and wait for these to turn mushy.
- Add the diced mixed vegetables to the onion-tomato mixture and coat the veggies.
- Sprinkle Suhana Kitchen King Masala, turmeric powder, coriander, cumin, and salt over the vegetables. Mix it well and add a little sugar to enhance the taste.
- Pour water and stir. Cover the pan with a lid and let the curry simmer over low heat for about 15-20 minutes or until the vegetables added are tender.
- If the curry is thick, add water and boil for 2 minutes.
- Serve hot with rice, roti and any Indian bread of your choice. Before serving, garnish the curry with coriander leaves.
Extra tip: If you like Suhana Kitchen King masala, add more to the gravy, after frying some in ghee.
